Our two glorious American White Oak Foeders, each is being developed with its own local wild yeast and bacterial culture that will eventually be home to two “mother beers” from which a host of Mahalo Aleworks sour and wild beers will be created.
An Array of fruiting tanks
A beautiful wall of stacked tanks in varying shapes and capacities allow us to blend, fruit and age an unlimited array of unique beers. We use tons of local organic fruit grown all over Maui.
Barrels, “squarrels” and more
Utilizing a multitude of wood aging methods allows us to introduce exotic woods to the mix, adding layers of complexity and flavors that could not be developed in any other way.
